• At present, the commonly used measurement methods in China include iodine affinity measurement method and iodine colorimetry. These common measurement methods are special properties of starch-forming iodine reagents to form colored complexes. However, a small amount of complex due to amylopectin also absorbs a small amount of wavelength at the maximum absorption wavelength of the complex produced by the amylose and iodine reagents. Therefore, a blank experiment correction is required. In addition, this method is not suitable for the determination of rice starch samples between different varieties. The amylose content has a strong linear relationship with the gel strength measured by the texture analyzer.

• The texture analyzer has a higher accuracy for the determination of samples with high amylose content. A starch gel with an amylose content of 50% was prepared, and the amylose content was determined by a texture analyzer method. The parallel determination was 6 times, and the parallel sample RSD was 2.8%.
• The texture analyzer method is simple to operate, and after degreasing and deproteinizing treatment, it only needs to be gelatinized and aged. Convenient and simple for batch measurement.
